Yummy Foz! Did you use the green enchilada sauce with cream cheese mixed in? Great idea for tonight... My recipe doesn't have that sauce, but you could add it. I'll post mine on the recipes thread.

I'm planning ahead... tonight will be thick pork loin chops grilled outside on the BBQ with a raspberry glaze. I'm trying to think of a nice side dish- any suggestions? Keeping in mind that it's 116 here and I don't want to heat up the kitchen too much. I'm open to ideas! BTW, Foz... the chicken enchiladas were the shiznit... I used some of a preroasted chicken that I bought at the market (so I wouldn't have to heat up the kitchen) and added a small can of diced green chiles- I layered it in the crock pot and voila!

I made rib-eye steaks, an organic baby greens salad with homemade balsamic/walnut oil dressing and sliced donut peaches with 50 year old balsamico drizzled on top.

tongiht was for them : sauteed sausage, onions, zucchini, cauliflower, lima beens and carrots with rustic mashed potatoes and a salad me: same exccept instead of mashed potatoes i had grilled ricotta cheese
